Appassilento refers to the Veneto winemaking technique from way back when; ‘apassimento’. Grapes are dried for a couple months to concentrate flavours and are then pressed and fermented to dryness. This lengthy process or ‘lento’ results in a dry red wine that has alluring, rounded red berried flavours whilst retaining incredible freshness.
This wine itself is an unorthodox blend of Corvina, Cabernet & Merlot. Fermented cool and slowly in two stages before settling in stainless steel and a couple months in Slavonian oak.
Fruity, with flavours of black cherry, plum, blackberry and currants it is full bodied, silky smooth and very soft and round in the mouth.
