Fermoy Cabernet Sauvignon

Bright and brilliant crimson red with black tints, the Fermoy Estate Cabernet Sauvignon shows rich and bold fruit aromas of mulberry, blackcurrant and raspberry compote, combined with complexing aromas of wet earth, dark chocolate and vanilla bean spice. Medium to full-bodied, this wine shows an array of red and black fruit richness, with classical cassis notes to the fore.  Rich, dark-fruited sweetness on the mid-palate is complimented by savoury roasting herb characters of bay-leaf and sage.  Dark chocolate, aniseed and vanilla bean oak spice add complexity and depth, while an elegant acid line provides poise and length.  Tannins provide structure and form, but are sufficiently soft and mouth-coating to allow for current drinking.
