100% Chardonnay

Tasting Note
Lifted notes of honeycomb, praline salted caramel and elderflower, with just a hint of white peach.A juicy full palate bursting with fruit and an amazing acid line to carry it all across the entire palate.

The chardonnay grapes were hand picked and sorted before being whole-bunch pressed and barrel fermented in 50% new French oak. This vintage was 100% wild yeast fermented adding to the wines mouth-feel and giving great complexity and texture. The chardonnay underwent 30% wild malolactic fermentation. Maturation in French oak for 12 months.
