Sang de Pigeon (pigeon’s blood) is a nod to the winemaker’s former life as a jewellery valuer. It’s the trade term for the colour of the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The precious grapes for this fragrant and deeply coloured wine were grown far to the south-east, in South Australia’s Barossa Valley.
Medium to full-bodied, with luscious dark fruits like as redcurrant and blueberry, dry floral and citrous flavours, fine tannin distribution, and a long and satisfying finish.
