La Violetta Nova Syrová – 37% Syrah, 25% Grenache, 24% Mataró, 13% Pinot Noir, 1% Pinot Meunier

The wine has a number of different elements, with a lot of whole bunches involved. Whole bunch Shiraz left on skins to start wild ferment, before draining off to finish in old oak; whole bunch carbonic Mataró and Grenache pressed off to old barriques; whole bunch Spätburgunder, a dash of Pinot Meunier. The wine is unfined. Sulphur dioxide is added just before bottling. Alc 14%.

Kind of novello in style, with lots of red fruits, florals and herbals. It’s juicy but savoury, layered and sessionable. Fully delish!
