Essentially a “pet-nat” style of sparkling, with a bit more thought, precision and science to make it less pet-natty. 100% Sauvignon Blanc from Ferguson Valley/Geographe. Pressed to stainless steel for wild ferment, chilled down to 4 degrees to pause ferment at desired residual sugar levels, settled then racked then bottled.

A lively and textural pétillant naturel brimming with candied lime, lemon sherbet and quince, with baked apple, brioche and sourdough complexity from 11 months on lees. Fresh, zippy acidity and a gentle spritz carry luscious tropical guava and green mango flavours to a balanced, round finish.

Pairing: Perfect as a standalone aperitif, or alongside fresh oysters, soft-rind cheeses, tempura prawns, or a lazy summer spread of charcuterie and good bread.
