Black Cockatoo Bush Berry Gin 200ml

Bush berries (or lilly pilly berries) are important to many indigenous nations in Australia and commonly feature in their artwork.  Taking this as inspiration the pink Bush Berry Gin was born.

Seeking to incorporate more native ingredients into this gin, the very distinctive river mint and Geraldton wax have been added to this unique gin.

The citrus component of this gin comes from pink grapefruit, giving the gin a slightly sweeter flavour. It also includes angelica root, orris root, cardamon seeds, coriander seeds and edible lavender. The pink hue comes post distillation when we add rosella flowers (also known as ‘wild hibiscus’) and a small quantity of raspberries. The colour varies with different batches of gin according to the nature of the rosella flowers added.

Lavender as a condiment works well with this drink, and pink grapefruit also complements the gin nicely.
