The Casa Defra is a light prosecco with a pleasant fresh and floral bouquet. Clean fruit notes make it very easy drinking, it is excellent for light dishes and anytime throughout the day.
The palate shows great length, full of plums, cherries, blackberries and vanilla – creamy and sweet!
Focussed and fine, the palate is medium in body and delicately textured with red cherries and ripe mulberries. Black olive, dried sage and coffee bean presents elegant layers, which are woven together with a minerally acid line and chalky structural tannin.
Aromas of tasty ripe black olives and spicy plums lead into a stylish and seamless palate.
Dark Side of the Moon Shiraz shows deep forest berry fruit characters complemented by spicy, almost chocolatey oak. The wine is finely structured, quite tight in youth. With time all those forward primary fruit flavours will round out to fill the palate. A pretty and remarkably delicate wine.
