To create this authentic coconut rum the Rum Diary team used their aged Caribbean Trinidad rum and infused it with 4 different methods of coconut plus distillate of wattle seed and cacao. This ‘Experimental Kitchen’ rum is made in very limited quantities and only when the time or season is right for the selected ingredients.
